There are a couple of answers to this: a flippant one used by the creators themselves (because they refuse to take themselves seriously), and a serious one that we have to read between the lines to see. 

The funny one, supposedly offered by series creator Greg Daniels ("Parks and Recreation"), is that the writers just got lazy.

Escaping his self-sabotaged music career stateside, Mickey (Stan), currently moonlighting as a club DJ, has a chance encounter at an Athens party with fellow American ex-pat and lawyer Chloe (Gough) and the pair strike an immediate romantic connection. On Mondays throughout their relationship, the pair find themselves suffering the consequences of their many short-sighted and rebellious actions from each previous weekend.

Wolf

Suffering from "species dysphoria," Jacob (MacKay), who believes he is a wolf, is admitted into a mental facility with the blessing of his parents after attacking his brother. Believing his human body does not correspond with his animal identity, he meets fellow patients, including Rufus (O'Shea), who believes himself to be a German Shephard, and Wildcat (Depp). The harsh environment of the mental facility paired with the malicious Zookeeper (Considine) compels the teenage patients to face their dysphoria while Jacob becomes further entrenched in his own animalistic behaviors.
