You have to be 21 or older to drink or gamble in Las Vegas, but in the newest season of "Hell's Kitchen," you shouldn't be much older to be head chef at one of Gordon Ramsay's restaurants.

On Monday, May 31, "Hell's Kitchen" returns to Fox for a milestone season -- its 20th -- and it will introduce the youngest contestants in the show's history.

Titled "Hell's Kitchen: Young Guns," the latest installment will feature 18 up-and-coming chefs, all age 23 or younger at the start of the competition. And while it's easy to dismiss youth and assume they're inexperienced, these talented young chefs are already making a name for themselves in a famously high-pressure industry.

The members of the red team are: Ava Harren of Anchorage, Alaska; Brynn Gibson of Vienna, Virginia; Emily Hersh of San Antonio, Texas (Hersh may be the first vegetarian chef to appear on the show); Josie Clemens of Macomb, Michigan; Keanu Hogan of Baltimore; Kiya Willhelm of Barrelville, Maryland; Megan Gill of Denton, Texas; Morgana Vesey of New London, Connecticut; and Victoria Sonora of Longmont, Colorado.

The chefs on the blue team are: Antonio Ruiz of Great Falls, Montana; Alex Lenik of Chicago; Jayaun Smith of Kansas City, Missouri; Kevin Argueta of Los Angeles; Matthew Francis Johnson of Duluth, Minnesota; Payton Cooper of Lexington, Kentucky; Sam Garman of Fleetwood, Pennsylvania; Steven Glenn of Richmond, Virginia; and Trenton Garvey of Union, Missouri.

They'll have to work in an all-new, high-pressure situation as they try to impress Ramsay, whose quips and insults can cut deeper than a well-honed knife.

Ultimately, the winner will be awarded the head chef position at Gordon Ramsay Steak at Paris Las Vegas -- the same prize given to Season 10 winner Christina Wilson in 2012. (Wilson later moved up to the position of corporate executive chef for the Gordon Ramsay Restaurant Group but has occasionally returned to "Hell's Kitchen" as a sous chef.)

The position -- not to mention the grueling "interview" process that is "Hell's Kitchen" -- could prove to be a life-altering experience for the winner. But before the finale airs later this summer, you can expect a lot of drama, personality conflicts and unexpectedly raw meat once "Hell's Kitchen: Young Guns" gets underway Monday, May 31, on Fox.
